<p><strong>Dear friends, families, and everyone in our trusted Benedetto&#8217;s community:</strong></p>
<p>Over the past few weeks, we have been inundated with news regarding the spread of COVID-19 and the policies enacted to help reduce the nationwide impact. It&#8217;s in our news feeds, all over social media, and even present when we are living our daily lives. It&#8217;s challenging to turn this off, and as the community becomes further pressed by events that seem almost impossible to have occurred, the cycle continues.</p>
<p>In times like this, it is normal for us to feel fear. As in all of life&#8217;s events, our reactions to this news are what sets the tone for not only ourselves but also the people who are looking to us for guidance and support. Our friends, our families, and our children are carefully watching us seeing how the adults in the room manage this information.</p>
<p>So how can we avoid making mistakes when it comes to the flood of information that we all are currently witnessing? The simple answer is we can&#8217;t, at least not entirely. What we do have the power to do is to decide what each of us will focus on. In times like this, if we do not focus, the world, or more simply, our adherence to social media, will do it for us. I am confident that every one that is part of our Benedetto&#8217;s organization knows how much we care about our patrons, our teams, and our communities.</p>
<p>These are unprecedented times, and everyone including Benedetto&#8217;s is doing their best to keep up with the ever-changing and fluid nature of the situation. We are sure that as a local community, we will all be responsible and come together and prevail in the end.</p>

<p>Benedetto’s Ristorante Italiano in Land O’ Lakes has been providing the freshest of ingredients to his recipes, thanks to its own farm. The local chef, known as Chef Ben, provides meals that are quite literally from farm to table.</p>
<p>This restaurant first opened in 2000, and was a huge hit. Decades later, Chef Ben continues to serve northern and <span class="vm-hook-outer vm-hook-default"><span class="vm-hook">Italian cuisine</span></span>, with an emphasis on seafood.</p>

<p>It was warm and slightly overcast, making for a comfortable day to explore and tour. We were extended an invite to the Kumquat Growers Citrus Farm and Benedetto’s owner Ben Pumo’s adjacent farm and hydroponic garden, located at 31647 Gude Rd. in Dade City, FL. As is always the case, we never pass it up. Supporting our local businesses and causes is always priority one.</p>
<p>In an area surrounded by lush forests, cow pastures, and farms, the setting couldn’t have been better. We arrived in time for the tour of both locations, complete with a tour tram that comfortably transported the visitors to the kumquat packing house and gift shop, the kumquat groves, then to the birthplace of fresh vegetables that Chef Ben Pumo proudly serves at his restaurant in Land ‘O Lakes.</p>
<p>Greg Gude, whose family has been growing on this land for generations, led the tour of the kumquat portion of the visit. He explained the history and uses of kumquats, and even demonstrated how to enjoy the fruit in its raw form. There were samples of kumquat pie and other edibles that were simply delicious, and pleased the crowd. <h4>Ben Pumo admits that 10 years ago, he was sleepwalking through life. Then he used a saute pan</h4>
<p>Ben Pumo’s path to salvation started with a daily walk to work along a thin cracked concrete sidewalk on a road called Sunset Lane.</p>
<p>Three DUIs meant he had to walk. This was late 1998, where he lives in Lutz, and the walk went past a post office, a Dollar Tree, a Winn-Dixie, and to Villaggio Italian restaurant, where he had a job washing dishes.</p>
<p>It’s only 1.2 miles, but that was a long walk in every other way – every day, over and over, there in the light and back in the dark.</p>
<p>But it led, somehow, to here, an unlikely success story in an unlikely place, his own award-winning Benedetto’s, in a converted Captain D’s fast-food fish joint, in the middle of the parking lot of the old Village Lakes Shopping Center with an Amscot and a Wal-Mart with a fading blue sign.</p>
<p>Benedetto’s has been among Florida Trend’s best 500 restaurants five straight years and is Pasco County’s only pick on the list, and Pumo, 33, is the owner, the head chef and the face on the billboards on U.S. 41 and State Road 54.</p>
<p>Now his walk is from table to table during the busy dinner hours. Smiles, small talk and hand shakes.</p>

			<p>“I’m Ben.”</p>
<p>“I’m the owner.”</p>
<p>“First time at Benedetto’s?”</p>
<p>“How is everything?”</p>
<p>This is more than just a story about a little restaurant that’s done big things.</p>
<p>How does a guy go from being a drug-using, drunken-driving, kicked-out-of-college screw-up to being a husband, a father, a cancer survivor and arguably one of the best chefs in Tampa Bay.</p>
<p>What this is, say those who knew him then and know him now, is the story of how a saute pan saved Ben Pumo.</p>
<p>&nbsp;</p>

<p>“There was a time,” his dad, Bennet Pumo Sr., said the other day on the phone from his home in South Florida, “when he could’ve gone one way or the other.”</p>
<p>The kid was a Boy Scout.</p>
<p>He loved baseball.</p>
<p>He made Eagle Scout.</p>
<p>His grandfather was a builder of homes. His father builds and rents warehouse space. In Miami Shores, Pumo grew up comfortable, went to Catholic schools, ate at nice restaurants.</p>
<p>He was hard-working and had an entrepreneurial instinct. He worked in a bowling alley and was a lifeguard in the summers. He ran a soft-serve ice cream machine in a concession stand at the local ball field. He sold $2 bills to classmates – for $3 and $4.</p>
<p>When he grew up, he wrote in his eighth-grade yearbook that he wanted to own his own barbecue restaurant.</p>
<p>Then he came to Saint Leo University.</p>
<p>He rented a house in San Antonio, put in a bar, put in a fog machine, put in laser lights, took to calling it the House of Blues and charged admission. His life was a party, and his house was the host, which led to him not going to class as much as he should have, which led to the folks at Saint Leo telling him he had to leave.</p>
<p>He cleaned pools for a while.</p>
<p>He drove a Budweiser truck for a while.</p>
<p>He lived with a couple of Mons Venus strippers for a while.</p>
<p>His criminal record starts in ’95. There’s a possession of marijuana. There’s another one. There’s a DUI in’ 98. There’s another one later that year. There’s another one the year after that.</p>
<p>One time his license already had been suspended.</p>
<p>Another time he didn’t even have to be pulled over. It was after 4 in the morning, his black Toyota pickup was stopped in the middle of the road, and he was asleep at the wheel.</p>
<p>All of the arrest reports paint a picture of a guy who was loose and lost. “Red, glassy eyes.” “Speech was slow and slurred.”</p>
<p>And this bit: “Trouble with his balance.”</p>
<p>“I remember being pissed at him many times,” his sister, Jen, 30, said on the phone from Denver, “because it put our family in a constant state of panic. It was, like, I hope he doesn’t kill himself, and I hope he doesn’t bring us all down with him.”</p>
<p>One of those years, at this point he’s not even sure which one, Pumo was getting ready to get on a flight to go home to Miami for Christmas. He had no money for gifts for his family, and was ashamed about that, and he looked in the mirror in the bathroom of his house in Lutz.</p>
<p>A pale face.</p>
<p>“What the f— are you doing?” he asked.</p>
<p>&nbsp;</p>

<p>So he started walking.</p>
<p>He washed dishes at Villaggio. Then he chopped parsley and grated cheese and baked bread.</p>
<p>Then he picked up a saute pan.</p>
<p>“It was like a I was struck by lightning,” Pumo said. “All of a sudden I could cook like a madman.”</p>
<p>In the middle of 1999, Elizabeth, his best friend from grade school and high school, moved in with him. They were engaged within a year and a half. She made him want to do right.</p>
<p>In the fall of 2000, he started cooking on his own in Whisky Willie’s bar on N Dale Mabry, working out of the kitchen in the back, doing cheeseburgers and chicken wings to one crowd … and lasagna and shrimp scampi to another. A fire in April 2001 ended that.</p>
<p>By then, though, he knew what he wanted.</p>
<p>He fixed on the vacant Captain D’s in the Village Lakes Shopping Center near State Road 54 and U.S. 41. He went to Miami and made a presentation to his grandfather. The Pumos bought the property for more than half a million dollars in 2001.</p>
<p>Now he had his place.</p>
<p>He married Elizabeth in August 2001. They honeymooned in Jamaica.</p>
<p>Now he was a husband.</p>
<p>Elizabeth gave birth to their daughter, Alyssa, on July 16, 2003.</p>
<p>Now he was a father.</p>
<p>Not two weeks later, though, he was diagnosed with testicular cancer. Chemo, five hours a day, five days a week. Three different surgeries. He went to work at his restaurant, when he could, in the evenings.</p>
<p>Sometimes that was in a wheelchair.</p>
<p>“I didn’t feel as bad being around the customers and around the restaurant,” he said. “This was my outlet for all the pain.”</p>

<p>Outside Benedetto’s are neon lights, a KFC, a Beef O’Brady’s, a Goodwill storefront. Down the road is the new Chili’s, the new Carrabba’s, the new Bonefish Grill.</p>
<p>Inside, though, is warm light, dark wood, a man playing Sinatra on the piano and servers in all sleek black except white suspenders. Women have their hair done and broaches on their blouses. The kids come here for prom. Their parents come here for birthdays and anniversaries. People come from Tampa, Brooksville, Port Richey, Zephyrhills. The bartenders know names.</p>
<p>On the walls are photos and stories.</p>
<p>Tampa Bay’s Best magazine calls it “a mecca worthy of a pilgrimage from afar.”</p>
<p>From the Weekly Planet in 2004: “A little over a week ago, I waited in line for over an hour for a table at the hottest restaurant … in Land O’Lakes. That’s a sentence I never thought I’d be writing.”</p>
<p>Pumo got a cooking merit badge in Boy Scouts for cooking one-pot dishes on campouts in the Keys, he helped with the family clam bakes at his grandfather’s house in Boothbay Harbor, Maine, and his family with Italian roots ate well and ate lots – but no hoity-toity culinary training, no lengthy fine-dining apprenticeship, just …</p>
<p>The people who know Pumo just think he finally found his gift.</p>
<p>“Being a chef is an art,” said Toby Herrera, the general manager at Benedetto’s, “and he’s an artist.”</p>
<p>When he’s not at the restaurant, he takes his daughter to Disney World, Busch Gardens, the Lowry Park Zoo or the Chuck E. Cheese in Tampa. He’s been the member of the year of the Central Pasco Chamber of Commerce. He’s been the honorary member of Land O’Lakes. He’s donated generously to Relay for Life.</p>
<p>And the restaurant? It marked six years last fall.</p>
<p>“Like I always used to tell my Scouts,” his father said, “stay on your trail.”</p>
<p>“The restaurant holds him,” his sister said. “It holds him solid.</p>
<p>“It saved him.”</p>
<p>One Friday night last month, there were people in the main dining room, there were people in the auxiliary dining room, there were people on the porch. There was a party of 30. When it got crazy busy, Pumo got in the middle of the line by the blue-flame burners and worked with a two-fisted, sweaty-headed purpose. <p>LAND O&#8217; LAKES, FL &#8212; The Republican Party of Pasco recently held its inaugural Five for Five Dinner to benefit its $5,000 scholarship fund.</p>
<p>The five-course meal was hosted by Chef Ben Pumo of Benedetto&#8217;s Restaurant in Land O&#8217; Lakes and featured Pasco County Sheriff Chris Nocco as the master of ceremonies.</p>
<p>Celebrity sous chefs were state Reps. Amber Mariano and Ardian Zika and Pasco County Commissioners Mike Moore, Mike Wells and Jack Mariano.</p>
<p>Sponsors for the event were U.S. Rep. Gus Bilirakis, Florida Sen. Wilton Simpson, former Florida Speaker of the House Will Weatherford, state Reps. Mariano, Zika and Danny Burgess, Commissioner Kathryn Starkey, Shawn Foster and Kurth Sombutmai, owner of 2 Minutes Restaurant.</p>
<p>The scholarship fund will provide five $1,000 scholarships to Pasco high school graduates who are winners of the Republican Party of Pasco&#8217;s Scholarship application process. Scholarship recipients must attend an accredited community college/university or accredited vocational school in Florida. The deadline for the application is April 15.</p>
